I had a brief respite on Sunday before waking up yesterday with wedding cupcakes to make and my promised vanilla sponge Union Jack cake I had promised for my mum’s Jubilee party to create.
Things started well (even though I ran out of eggs and had to do a quick dash to the supermarket) and the wedding cupcakes turned out as I had hoped. What a weekend to be wed!
Once these had been safely despatched, I carefully decorated my sumptuous vanilla sponge with mascarpone and cream frosting and then created a Union Jack out of my fresh raspberries, strawberries and blueberries. Now, here you will have to take my word for how good it looked as, in a rush to get to the party… already 2 hours late… I thought “I’ll take a pic when it’s in situ on a lovely cake stand”. Alas, as I went to plate the cake up, the greaseproof paper I was transporting it on split and the whole cake went crashing to the ground.. or rather my mum’s carpet. I would like to say I took it calmly but hmmm..perhaps I need a few lessons in dealing with difficult situations gracefully from the Queen!
As a slight consolation, one layer of the cake was still edible, even though the Union Jack had sadly crumpled and couldn’t be saved. Nevertheless, after a couple of glasses of fizz and some sympathetic words from friends and family, I cheered up and a lovely day was had by all.
